Insalata di Riso


Being far from home makes me crave italian food! So this is an english-only post since i hope all you italians know how to do Insalata di Riso!!!
This is a typical summer dish, fast and easy to do. It's called Insalata di Riso (Rice Salad). It would be even easier to do it if we were in Italy, since in the supermarkets there they have a can called "Condiriso" and that has everything you need in it - just add your personal touches! Everyone does it in a different way.. some add cheese, mayo.. i am not a fan of those additions!
Here is my version, buit from my memories of when my mom used to do it!
  • White long grain rice, boiled as if it was pasta (bring water to boil in a large saucepan and salt then add rice)
  • When cooked (10mins approx) drain and let cool
  •  Add fresh tomatoes in pieces, sweet corn, cornichons, tuna, green pitted olives (cut in 2) and artichoke hearts
  • Add secret ingredient (a little bit of worcestershire sauce)
  • Stir!
Cover and keep in the fridge. Take out of the fridge approx 30 min before you are going to eat it, or it will be too cold and you won't be able to taste all the different ingredients!
